It behoves us to turn back to the traditional ways our ancestors used in feeding their families when there were no refrigeration or freezing methods available. We can purchase organic fermented sauerkraut and kefir from health food stores or enjoy making them ourselves. Small amounts introduced into autistic diets help to restore the ‘good gut bugs’ in the GI tract (gastrointestinal tract) depleted/destroyed by yeasts. They strengthen and support digestive and immune systems helping bodies to fight off and prevent diseases. Apart from green/red cabbage, the traditional base for sauerkraut, we can add additional vegetables that our family particularly like. We can also make kefir (a wonderful probiotic drink) from young green coconuts. The benefits are immense especially where the immune system is concerned.. our children begin to glow!
